This particular rice goes by a variety of names, such as red yeast rice, red fermented rice, red kojic rice, red koji rice, or ang-kak, is a bright reddish purple fermented rice, which acquires its colour from being cultivated with the mold Monascus purpureus. In Japan, it is known as beni-koji or akakoji and in Taiwan it is sometimes also called ng-chau in Taiwanese. Among the Hakka, it is known as fungkiuk. In China it is widely available under the brand name XueZhiKang , and in Singapore it is available as Hypocol. The ancient Chinese used this originally to invigorate the body, aid in digestion, and remove blood blockages. today it is used as a dietary supplement to help decrease cholesteral levels.
