Celiac disease is a digestive condition which is triggered by consumption of the protein gluten, which is found in bread, pasta, cookies, pizza crust as well as many other foods containing wheat, barley or rye. People who have celiac disease and eat food containing gluten, have an immune reaction occur in their small intestine, causing damage to the surface of the small intestine and an inability to absorb certain nutrients. With time, the decreased absorption of nutrients which occurs with celiac disease can result in vitamin deficiencies which deprive the brain, peripheral nervous system, bones, liver and other organs of vital nourishment, leading to other illnesses and stunted growth in children.
