Lentils a Healthy Choice

Monday, September 14, 2009

Lentils are a part of the legume family, but tend to be overlooked in favor of beans and peas. However, we should all try to eat more lentils, because they are very healthy and chock full of protein. One other advantage is that they are sold dry and therefore do not go bad. They are also very inexpensive as an alternative to meat for protein.

Aside from protein, lentils also contain a lot of fiber, and vitamins B and C. They also contain high amounts of iron, which is vital for growing children and pregnant women. In addition, they contain eight of the essential amino acids, such as lysine.

Researchers recently found evidence that a diet high in lentils and peas may also lower the risk of breast cancer in women, although more research is required.  Health Magazine recently named lentils as one of the top 5 healthiest foods.

Lentils can be used in many different recipes and is very versatile. They come in many different colors, but they are all equally nutritious and have the same health benefits. So why not try a lentil based recipe today and get healthy?
